Sumac Roasted Vegetables


  • Assorted vegetables (e.g., bell peppers, zucchini, cherry tomatoes)
  • 3 tbsp olive oil
  • 1 tbsp ground sumac
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
  • Lemon wedges for serving


  1. Preheat the oven to 400’F (200’C).
  2. Cut vegetables into bite-sized pieces.
  3. Toss vegetables with olive oil, ground sumac, salt, and IEpper.
  4. Spread the vegetables on a baking sheet in a single layer.
