Ingredients:
- 8 high-quality beef or pork hot dogs
- 8 artisan hot dog buns
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon brown sugar
- Salt and pepper, to taste
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon sweet pickle relish
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- Arugula or baby spinach leaves
- Crumbled blue cheese or feta (optional)
Instructions:
- Melt butter in a skillet over medium heat. Add the onions, brown sugar, salt, and pepper. Cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes. Set aside.
- In a bowl, mix together mayonnaise, sour cream, ketchup, mustard, pickle relish, smoked paprika, salt, and pepper until well combined. Adjust seasoning to taste.
- Preheat your grill to medium-high. Grill the hot dogs, turning occasionally, until they are heated through and have grill marks, about 5-7 minutes.
- Toast the buns on the grill for about 1 minute, or until lightly golden.
- Spread a generous amount of special sauce on each bun. Place a grilled hot dog in each bun, then top with caramelized onions, a handful of arugula or baby spinach, and crumbled blue cheese or feta, if using.
- Present your gourmet hot dogs with a side of sweet potato fries or a mixed green salad
