Ultimate Gourmet Hot Dogs with Smoky Paprika & Caramelized Onions

Ingredients:

  • 8 high-quality beef or pork hot dogs 
  • 8 artisan hot dog buns 
  • 2 large onions, thinly sliced 
  • 2 tablespoons butter 
  • 1 tablespoon brown sugar 
  • Salt and pepper, to taste 
  • 1/2 cup mayonnaise 
  • 2 tablespoons sour cream 
  • 2 tablespoons ketchup 
  • 1 tablespoon yellow mustard 
  • 1 tablespoon sweet pickle relish 
  • 1 teaspoon smoked paprika 
  • Salt and pepper, to taste 
  • Arugula or baby spinach leaves 
  • Crumbled blue cheese or feta (optional) 

Instructions: 

  1. Melt butter in a skillet over medium heat. Add the onions, brown sugar, salt, and pepper. Cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes. Set aside.
  2. In a bowl, mix together mayonnaise, sour cream, ketchup, mustard, pickle relish, smoked paprika, salt, and pepper until well combined. Adjust seasoning to taste.
  3. Preheat your grill to medium-high. Grill the hot dogs, turning occasionally, until they are heated through and have grill marks, about 5-7 minutes. 
  4. Toast the buns on the grill for about 1 minute, or until lightly golden. 
  5. Spread a generous amount of special sauce on each bun. Place a grilled hot dog in each bun, then top with caramelized onions, a handful of arugula or baby spinach, and crumbled blue cheese or feta, if using. 
  6. Present your gourmet hot dogs with a side of sweet potato fries or a mixed green salad
