HOW TO USE: 👨🍳
Understanding the Blend:
This is a ground seasoning blend, not a whole spice mix. Nothing needs to be strained out or removed. It is meant to stay in the dish and be eaten.
For Ground Meat Kebabs or Kofta:
Use 1 to 1 1/2 tablespoons per 1 pound / 450 g of ground lamb or beef. Add salt separately. For even better texture and flavor, mix in a little grated onion that has been squeezed dry, then knead the meat until it feels sticky and cohesive before shaping.
For Chicken, Lamb, or Beef Marinades:
Use 1 tablespoon per 1 pound / 450 g of meat with 1 tablespoon oil and 1 tablespoon lemon juice, yogurt, or both. Add salt separately. Marinate 30 minutes to overnight, then grill, roast, or pan-cook over fairly high heat.
For Vegetables and Chickpeas:
Use 1 to 2 teaspoons per pound with oil and salt, then roast until browned. It works especially well on cauliflower, potatoes, onions, and chickpeas.
For Best Flavor:
This blend works best during mixing, marinating, or cooking — not just sprinkled on at the end. Strong heat helps develop the kind of browned, savory flavor people expect from kebabs.
