Ingredients
- Butter for ramekins + 4 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 cup milk
- ½ cup pumpkin purée
- 3 tablespoons sugar
- 1 tablespoon The Spice Way Pumpkin Pie Spice
- 4 large egg yolks
- 5 large egg whites
- Pinch cream of tartar
Preparation
- Preheat oven to 375°F (190°C). Butter six ramekins and dust with sugar.
- Make a roux with butter and flour; whisk in milk and cook until thick.
- Stir in pumpkin, sugar, and spice; cool slightly and whisk in yolks.
- Beat egg whites with cream of tartar to stiff peaks; gently fold into base.
- Fill ramekins ¾ full and bake 18–20 minutes until puffed. Serve immediately.
Plating Note: Serve straight from the oven; dust with powdered sugar and a pinch of Pumpkin Pie Spice.
