Pumpkin Spice Soufflé (Showcase Dish)

Serves: 6

Ingredients

  • Butter for ramekins + 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup milk
  • ½ cup pumpkin purée
  • 3 tablespoons sugar
  • 1 tablespoon The Spice Way Pumpkin Pie Spice
  • 4 large egg yolks
  • 5 large egg whites
  • Pinch cream of tartar

Preparation

  1. Preheat oven to 375°F (190°C). Butter six ramekins and dust with sugar.
  2. Make a roux with butter and flour; whisk in milk and cook until thick.
  3. Stir in pumpkin, sugar, and spice; cool slightly and whisk in yolks.
  4. Beat egg whites with cream of tartar to stiff peaks; gently fold into base.
  5. Fill ramekins ¾ full and bake 18–20 minutes until puffed. Serve immediately.

Plating Note: Serve straight from the oven; dust with powdered sugar and a pinch of Pumpkin Pie Spice.
