Ingredients
- 1 ¼ cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 tablespoon The Spice Way Pumpkin Pie Spice
- ¼ teaspoon salt
- 1 cup milk
- ½ cup pumpkin purée
- 1 large egg
- 2 tablespoons melted butter
Preparation
- Whisk flour, sugar, baking powder, spice, and salt.
- In another bowl, whisk milk, pumpkin, egg, and melted butter.
- Fold wet into dry until just combined.
- Cook on a lightly greased skillet over medium heat until bubbles form; flip and cook until golden.
Plating Note: Stack three pancakes, drizzle with maple syrup, and finish with a pinch of Pumpkin Pie Spice.
