Ingredients
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablespoon The Spice Way Pumpkin Pie Spice
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup brown sugar
- 1 cup pumpkin purée
- 1 large egg
- 1 teaspoon vanilla extract
Preparation
- Preheat oven to 350°F (175°C).
- Whisk flour, baking soda, baking powder, spice, and salt.
- Cream butter and brown sugar until fluffy; beat in pumpkin, egg, and vanilla.
- Fold dry ingredients into wet.
- Drop spoonfuls onto a lined sheet; bake 12–14 minutes.
Plating Note: Dust cooled cookies with a mixture of sugar and Pumpkin Pie Spice for sparkle.
