Ingredients:
- 1 lb cooked lobster meat, chopped into bite-sized pieces
- 1/4 cup mayonnaise
- 1 celery stalk, finely chopped
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped fresh chives or minced onion
- Salt and pepper to taste
- 4 to 6 split-top hot dog buns
- 2 tablespoons unsalted butter, melted
- Optional: lettuce leaves for serving
Instructions:
- Prepare the Lobster Salad: In a large bowl, combine the chopped lobster meat, mayonnaise, chopped celery, lemon juice, chives or green onions, salt, and pepper. Gently toss until well combined. Adjust seasoning to taste.
- Prepare the Buns: Brush the melted butter onto the insides of each split-top hot dog bun.
- Toast the Buns: Heat a skillet or griddle over medium heat. Place the buns, buttered side down, onto the skillet. Toast until golden brown and crisp, about 2-3 minutes.
- Assemble the Lobster Rolls: Place a lettuce leaf (if using) inside each toasted bun. Spoon the lobster salad into the buns, dividing it evenly among them.
- Serve: Serve the lobster rolls immediately, with additional lemon wedges on the side if desired.
