Fougasse (Provençal Herb Bread)

Serves: 6–8

Ingredients

  • 3 cups all-purpose flour
  • 1 cup warm water
  • 2 tsp instant yeast
  • 1 tsp salt
  • 2 tbsp olive oil
  • 2 tsp Herbes de Provence

Preparation

  1. Combine flour, yeast, and salt. Add water, olive oil, and Herbes de Provence; knead 8–10 minutes until smooth.
  2. Cover; rise 1 hour until doubled.
  3. Shape into an oval; cut leaf-like slits and gently open them.
  4. Bake at 400°F (200°C) for 20–25 minutes until golden.

Optional Plating Note: Serve whole on a wooden board; tear one piece slightly to reveal the airy crumb.
