Ingredients
- 2 zucchinis, sliced
- 1 eggplant, sliced
- 2 bell peppers, chopped
- 1 onion, sliced
- 2 cups crushed tomatoes
- 2 tsp Herbes de Provence
- 2 tbsp olive oil
- Salt & pepper
Preparation
- Preheat oven to 375°F (190°C).
- Layer vegetables in a casserole; drizzle with olive oil.
- Pour tomatoes over; sprinkle Herbes de Provence, salt, and pepper.
- Cover and bake 45 minutes; uncover last 10 minutes to reduce.
Optional Plating Note: Serve in the casserole or a low earthenware dish; arrange vegetable slices in alternating colors for a mosaic effect.
