Ratatouille with Herbes de Provence (Oven Method)

Ingredients

  • 2 zucchinis, sliced
  • 1 eggplant, sliced
  • 2 bell peppers, chopped
  • 1 onion, sliced
  • 2 cups crushed tomatoes
  • 2 tsp Herbes de Provence
  • 2 tbsp olive oil
  • Salt & pepper

Preparation

  1. Preheat oven to 375°F (190°C).
  2. Layer vegetables in a casserole; drizzle with olive oil.
  3. Pour tomatoes over; sprinkle Herbes de Provence, salt, and pepper.
  4. Cover and bake 45 minutes; uncover last 10 minutes to reduce.

Optional Plating Note: Serve in the casserole or a low earthenware dish; arrange vegetable slices in alternating colors for a mosaic effect.
