Ingredients
- 2 cans (15 oz each) chickpeas, drained and rinsed, or 3 cups cooked chickpeas
- 1 1/2 tablespoons olive oil
- 2 teaspoons The Spice Way Smoked Paprika
- 1/2 teaspoon The Spice Way Granulated Garlic
- 3/4 teaspoon kosher salt
- 1/4 teaspoon The Spice Way Black Pepper
- Pinch of The Spice Way Cayenne Pepper, optional
Preparation
- Heat the oven to 400°F (200°C). Drain and rinse the chickpeas, then dry them very well with a clean towel.
- Toss the chickpeas with the olive oil and kosher salt. Spread in a single layer on a baking sheet.
- Roast 25 to 30 minutes, shaking the pan once or twice, until crisp at the edges. Toss the hot chickpeas with the smoked paprika, granulated garlic, black pepper, and cayenne if using, then return to the oven for 5 minutes.
- Cool 5 minutes before serving. For a fresher spice finish, you can also toss the roasted chickpeas with the spices immediately after roasting instead of returning them to the oven. Eat the same day for the best texture.
