Makes: about 24 biscotti
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1 teaspoon The Spice Way Ceylon Cinnamon
- 1/4 teaspoon The Spice Way Ground Ginger
- 3 large eggs
- 3/4 cup granulated sugar
- 1/3 cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- 1/2 cup chopped dark chocolate or mini chocolate chips
- 6 oz dark chocolate, melted (for dipping)
- Orange and black sprinkles for decoration
Preparation:
1. Heat oven to 350°F (175°C). Line a baking sheet with parchment paper. Whisk flour, cocoa powder, baking powder, salt, cinnamon, and ginger.
2. In another bowl, beat eggs, sugar, melted butter, and vanilla until smooth. Add dry ingredients and mix into a firm dough. Fold in chopped chocolate.
3. Divide dough in half, shape into logs, and bake 25–30 minutes until firm. Cool 10 minutes, then slice diagonally.
4. Bake slices 8–10 minutes per side until crisp. Cool completely, dip in melted chocolate, and decorate with sprinkles.
