Tzatziki Dip

Ingredients:

  • 1 cup Greek yogurt (full-fat or 2%)
  • 1 cucumber, finely grated and drained
  • 1 tablespoon garlic, minced
  • 1 tablespoon tzatziki seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • Optional: a pinch of fresh or dried mint, finely chopped

Instructions:

  1. Wash and peel the cucumber. You can leave some of the peel on for added texture and color if you prefer.
  2. Grate the cucumber using the large holes of a box grater.
  3. Place the grated cucumber in a clean kitchen towel or cheesecloth, and squeeze out as much moisture as possible. This step is crucial to prevent the dip from becoming too watery.
  4. In a medium mixing bowl, combine the Greek yogurt, grated and drained cucumber, minced garlic, tzatziki seasoning, olive oil, lemon juice, chopped dill, salt, and pepper.
  5. If using, add a pinch of fresh or dried mint for an extra layer of flavor.
  6. Mix all the ingredients together until well combined.
  7. Taste the dip and adjust the seasoning as needed, adding more salt, pepper, or lemon juice to suit your taste.
  8. Give the dip a good stir before serving.
  9. Transfer the tzatziki dip to a serving bowl and drizzle with a little extra olive oil on top, if desired.
  10. Garnish with a sprig of fresh dill or mint for a decorative touch.
