Ingredients:
- 2 racks of lamb (about 1 1/2 pounds each), frenched
- 2 teaspoons paprika powder
- 2 teaspoons garlic powder
- 1 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt to taste
- 2 tablespoons olive oil
Instructions:
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together the paprika powder, garlic powder, black pepper, cayenne pepper, and salt.
- Rub the spice mixture evenly over the racks of lamb, covering all sides.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Once the skillet is hot, add the racks of lamb, fat side down, and sear for 3-4 minutes until golden brown.
- Flip the racks of lamb and sear the other side for an additional 3-4 minutes.
- Transfer the skillet to the preheated oven and roast the lamb for 15-20 minutes for medium-rare or until the internal temperature reaches 135°F (57°C).
- If you prefer your lamb cooked differently, adjust the cooking time accordingly (about 20-25 minutes for medium or 25-30 minutes for well done).
- Once the lamb reaches your desired doneness, remove it from the oven and let it rest for 5-10 minutes before slicing.
- Slice the racks of lamb between the bones into individual chops.
- Serve the rack of lamb chops hot, garnished with fresh herbs if desired.
