Paprika-Dill Potato Salad

Ingredients:

  • 2 lbs red potatoes, cut into bite-sized pieces
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons Dijon mustard
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 2 tablespoons fresh dill, chopped
  • 2 green onions, sliced
  • Salt to taste

Instructions:

  1. Boil the potatoes in salted water until tender, about 10-12 minutes. Drain and let them cool.
  2. In a large bowl, mix the mayonnaise, sour cream, Dijon mustard, smoked paprika, garlic powder, black pepper, and salt.
  3. Add the cooled potatoes, fresh dill, and green onions to the bowl. Mix until the potatoes are evenly coated.
  4. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
