Mediterranean Herb Pasta Salad With Feta and Olives

Ingredients

  • 12 oz penne, fusilli, or rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black or Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup cucumber, diced
  • 1/4 cup roasted red pepper, chopped, optional
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 garlic clove, minced
  • 2 teaspoons The Spice Way Herbes de Provence
  • 1/2 teaspoon kosher salt, plus more to taste
  • The Spice Way Black Pepper, to taste
  • 2 tablespoons chopped fresh parsley or basil

Preparation

  1. Cook the pasta in salted water until al dente. Drain, rinse briefly under cool water, and let it drain well.
  2. In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, garlic, Herbes de Provence, salt, and black pepper.
  3. In a large bowl, combine the pasta, tomatoes, olives, feta, cucumber, and roasted red pepper if using. Pour the dressing over the salad and toss well.
  4. Chill 30 minutes before serving. Finish with parsley or basil and adjust seasoning as needed.
