Morrocan Carrot Salad



  1. Combine grated carrots, olive oil, and lemon juice in a bowl.
  2. Toast cumin, coriander, and ground caraway seeds in a skillet for 1-2 minutes; add to carrots.
  3. Season with paprika, salt, and fold in cilantro, parsley, green onions (if using), and raisins or dates (if using).
  4. Refrigerate for at least 30 minutes.
  5. Garnish with chopped nuts before serving.
  6. Serve chilled and enjoy your Moroccan Carrot Salad with the added warmth of caraway seeds!
