Ingredients:
- 4 cups grated carrots
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon The Spice Way Ground Cumin
- 1/2 teaspoon The Spice Way Ground Coriander
- 1/4 teaspoon The Spice Way Ground Caraway Seeds
- 1/2 teaspoon The Spice Way Paprika
- 3/4 teaspoon kosher salt
- 1/4 teaspoon The Spice Way Black Pepper
- 1/4 cup chopped fresh cilantro
- 2 tablespoons chopped parsley
- 2 tablespoons sliced green onions (optional)
- 1/4 cup raisins or chopped dates (optional)
- Chopped toasted almonds or pistachios (optional)
Preparation:
1. Place grated carrots in a large bowl with cilantro, parsley, green onions (if using), and raisins or dates (if using).
2. Warm olive oil in a small skillet over low heat. Add cumin, coriander, caraway, and paprika and cook 30 seconds until fragrant. Remove from heat and stir in lemon juice, salt, and black pepper.
3. Pour warm spiced dressing over carrots and toss well.
4. Refrigerate at least 30 minutes before serving. Garnish with nuts if desired.
