Morrocan Carrot Salad By The Spice Way May 16, 2024 Ingredients 4 cups grated carrots 1/4 cup olive oil 2 tbsp fresh lemon juice 1 tsp ground cumin 1 tsp ground coriander 1/2 tsp ground caraway seeds 1/2 tsp paprika Salt and pepper to taste 1/4 cup each chopped fresh cilantro and parsley 1/4 cup green onions (optional) 1/4 cup raisins or chopped dates Chopped nuts for garnish (optional) Instructions Combine grated carrots, olive oil, and lemon juice in a bowl. Toast cumin, coriander, and ground caraway seeds in a skillet for 1-2 minutes; add to carrots. Season with paprika, salt, and fold in cilantro, parsley, green onions (if using), and raisins or dates (if using). Refrigerate for at least 30 minutes. Garnish with chopped nuts before serving.
