Lemon Peach Cobbler By The Spice Way May 15, 2024 INGREDIENTS: 8 fresh peaches, peeled, pitted, and sliced into thin wedges 1/4 cup white sugar 1/4 cup brown sugar, packed 1/4 teaspoon ground cinnamon 1/8 teaspoon ground nutmeg 1 teaspoon fresh lemon juice 2 teaspoons cornstarch 1 tablespoon finely grated lemon peel 1 cup all-purpose flour 1/4 cup white sugar 1/4 cup brown sugar, packed 1 teaspoon baking powder 1/2 teaspoon salt 6 tablespoons unsalted butter, chilled and cut into small pieces 1/4 cup boiling water INSTRUCTIONS: Preheat oven to 425°F (220°C). In a large bowl, mix peaches, sugars, cinnamon, nutmeg, lemon juice, cornstarch, and lemon peel. Pour into a 2-quart baking dish. Combine flour, sugars, baking powder, and salt. Blend in butter until the mixture resembles coarse meal. Stir in boiling water to form a dough. Drop spoonfuls of topping over the peach mixture. About 25 minutes, until topping is golden.
