Jalebi

Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp cornstarch
  • 1/4 tsp baking powder
  • 1/2 tsp Ground Cardamom
  • 1/2 cup yogurt
  • Water (as needed)
  • Ghee or oil (for frying)
  • 1 cup sugar
  • 3/4 cup water
  • A few saffron strands (optional)

Instructions:

  1. Mix flour, cornstarch, baking powder, and cardamom. Add yogurt and water to form a smooth, thick batter. Let it rest for 30 minutes.
  2. For syrup, boil sugar, water, and cardamom until sticky.
  3. Heat oil in a pan, pour the batter into a piping bag (or bottle) and pipe spirals into the oil. Fry until golden and crispy.
  4. Soak fried jalebis in warm syrup for a few seconds.
