Ginger Chicken Stir-Fry

Ingredients:

  • 1 pound chicken breast, sliced thinly 
  • 2 tablespoons soy sauce 
  • 1 tablespoon ginger, minced 
  • 2 cloves garlic, minced 
  • 1 red bell pepper, sliced 
  • 1 cup snow peas 
  • 1 carrot, julienned 
  • 2 tablespoons vegetable oil 
  • 1 tablespoon sesame oil 

Instructions:

  1. Marinate the chicken slices in soy sauce, ginger, and garlic for 10 minutes. 
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.Add the chicken and stir-fry until cooked through. Remove from the skillet and set aside. 
  3. In the same skillet, add sesame oil and stir-fry the bell pepper, snow peas, and carrot until tender-crisp. 
  4. Return the chicken to the skillet and toss to combine. Serve with steamed rice.
