Baked Sweet Potato with Black Beans and Salsa By The Spice Way Sep 10, 2024 Ingredients: 2 large sweet potatoes 1 can black beans, drained and rinsed 1 cup salsa 1/4 cup Greek yogurt 1/4 teaspoon cumin 1/4 teaspoon chili powder Salt and pepper to taste Instructions: Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork and bake for 45-60 minutes until tender. In a small bowl, mix black beans with cumin, chili powder, salt, and pepper.
