Baked Sweet Potato with Black Beans and Salsa

Ingredients:

  • 2 large sweet potatoes
  • 1 can black beans, drained and rinsed
  • 1 cup salsa 
  • 1/4 cup Greek yogurt 
  • 1/4 teaspoon cumin 
  • 1/4 teaspoon chili powder 
  • Salt and pepper to taste 

Instructions:

  1. Preheat the oven to 400°F (200°C). 
  2. Pierce the sweet potatoes with a fork and bake for 45-60 minutes until tender.
  3. In a small bowl, mix black beans with cumin, chili powder, salt, and pepper.
  4.  Slice the sweet potatoes open and fill them with the black bean mixture.
  5. Top with salsa and a dollop of Greek yogurt before serving.
