Ingredients:
- 1 can black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1 cup shredded cheese
- 4 large tortillas
- 1 tablespoon olive oil
Instructions:
- In a bowl, mix black beans, corn, cumin, paprika, garlic powder, and chili powder.
- Heat a skillet over medium heat. Place a tortilla in the skillet, sprinkle with cheese, and spread the bean mixture over half of the tortilla.
- Fold the tortilla over and cook until the cheese is melted and the tortilla is golden brown on both sides.
- Repeat with the remaining tortillas. Cut into wedges and serve.
