Cumin-Spiced Black Bean Quesadillas

Ingredients:

  • 1 can black beans, drained and rinsed 
  • 1/2 cup corn kernels 
  • 1/2 teaspoon cumin 
  • 1/2 teaspoon paprika 
  • 1/2 teaspoon garlic powder 
  • 1/4 teaspoon chili powder
  • 1 cup shredded cheese 
  • 4 large tortillas 
  • 1 tablespoon olive oil 

Instructions:

  1. In a bowl, mix black beans, corn, cumin, paprika, garlic powder, and chili powder. 
  2. Heat a skillet over medium heat. Place a tortilla in the skillet, sprinkle with cheese, and spread the bean mixture over half of the tortilla. 
  3. Fold the tortilla over and cook until the cheese is melted and the tortilla is golden brown on both sides. 
  4. Repeat with the remaining tortillas. Cut into wedges and serve.
