Biryani

Ingredients:

  • 2 cups basmati rice (soaked)
  • 500g chicken (or vegetables)
  • 2 onions (sliced)
  • 2 tomatoes (chopped)
  • 1/2 cup yogurt
  • 1 tbsp garam masala
  • 1 tsp coriander seeds (crushed)
  • 2 tbsp ginger-garlic paste
  • 1/2 tsp Turmeric
  • 1/2 tsp red chili powder
  • Fresh coriander and mint leaves
  • 3-4 green chilies
  • Whole spices (bay leaves, cinnamon, cardamom)
  • Ghee or oil
  • Saffron milk (optional)

Instructions:

  1. Cook rice with whole spices until 80% done.
  2. In a pan, heat ghee, fry onions until golden. Add ginger-garlic paste, tomatoes, chicken, and spices (garam masala, coriander seeds, turmeric, chili powder). Cook until the chicken is done.
  3. Layer half-cooked rice over the chicken. Top with coriander, mint, green chilies, and saffron milk.
  4. Cover and cook on low heat for 20 minutes (dum).
