Ingredients:
- 2 cups basmati rice (soaked)
- 500g chicken (or vegetables)
- 2 onions (sliced)
- 2 tomatoes (chopped)
- 1/2 cup yogurt
- 1 tbsp garam masala
- 1 tsp coriander seeds (crushed)
- 2 tbsp ginger-garlic paste
- 1/2 tsp Turmeric
- 1/2 tsp red chili powder
- Fresh coriander and mint leaves
- 3-4 green chilies
- Whole spices (bay leaves, cinnamon, cardamom)
- Ghee or oil
- Saffron milk (optional)
Instructions:
- Cook rice with whole spices until 80% done.
- In a pan, heat ghee, fry onions until golden. Add ginger-garlic paste, tomatoes, chicken, and spices (garam masala, coriander seeds, turmeric, chili powder). Cook until the chicken is done.
- Layer half-cooked rice over the chicken. Top with coriander, mint, green chilies, and saffron milk.
- Cover and cook on low heat for 20 minutes (dum).
