Ingredients:
- 6 medium bell peppers
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 lb ground beef
- 2 tablespoons The Spice Way Barbeque Blend
- 1 teaspoon The Spice Way Pure Paprika
- 1/2 teaspoon The Spice Way Ground Turmeric
- 1/2 teaspoon The Spice Way Black Pepper
- 1/2 teaspoon kosher salt, plus more to taste
- 2 tablespoons tomato paste
- 1 1/2 cups cooked rice
- 1 1/2 cups tomato sauce or crushed tomatoes, divided
- 1 teaspoon honey (optional)
- 1 tablespoon lemon juice (optional)
- Chopped parsley for garnish
Preparation:
1. Heat oven to 375°F (190°C). Cut tops off peppers and remove seeds. Place upright in baking dish.
2. Heat olive oil in skillet. Cook onion 4 minutes, then add garlic and beef and brown, breaking it apart.
3. Stir in Barbeque Blend, paprika, turmeric, black pepper, salt, and tomato paste. Cook 1 minute. Add rice, 1/2 cup tomato sauce, honey (optional), and lemon juice (optional).
4. Fill peppers with mixture. Pour remaining tomato sauce around them, cover, and bake 30 minutes. Uncover and bake 10–15 minutes more until tender.
Note: Ground beef should be cooked to 160°F.
