Ingredients (for ~1 quart jar):
- 1 lb (450 g) fresh okra
- 1 cup (240 ml) white vinegar
- 1 cup (240 ml) water
- 1 tablespoon salt
- 1 tablespoon sugar (optional)
- 1 tablespoon of The Spice Way Pickling Spice
Instructions:
- Prepare okra: Wash okra thoroughly. Pack into a sterilized jar with tips pointing up.
- Make brine: In a saucepan, bring vinegar, water, salt, and sugar to a boil. Turn off heat and stir in spices.
- Fill jar: Pour hot brine mixture into the jar, completely covering the okra.
- Store: Seal jar and refrigerate. Let flavors develop for 1–2 weeks before enjoying.
