Roasted Potatoes with Herbes de Provence By The Spice Way Dec 2, 2025 Serves: 4 (side) Ingredients 2 lbs baby potatoes, halved 2 tbsp olive oil 2 tsp Herbes de Provence 1 tsp kosher salt ½ tsp black pepper 1 tsp lemon zest Preparation Preheat oven to 425°F (220°C). Toss potatoes with olive oil, Herbes de Provence, salt, and pepper. Spread on a baking sheet in a single layer. Roast 30–35 minutes, turning once, until golden and crisp.
