Roasted Potatoes with Herbes de Provence

Serves: 4 (side)

Ingredients

  • 2 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 2 tsp Herbes de Provence
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp lemon zest

Preparation

  1. Preheat oven to 425°F (220°C).
  2. Toss potatoes with olive oil, Herbes de Provence, salt, and pepper.
  3. Spread on a baking sheet in a single layer.
  4. Roast 30–35 minutes, turning once, until golden and crisp.
  5. Sprinkle with lemon zest before serving.

Optional Plating Note: Serve in a shallow bowl; garnish with a small rosemary or thyme sprig.
