Ingredients:
- 12 ounces orzo, cooked al dente and cooled
- 1 cup baby spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/3 cup oil-packed sun-dried tomatoes, chopped
- 1/4 cup pine nuts, toasted
- 3 tablespoons olive oil
- 1 1/2 tablespoons lemon juice
- 1 to 2 teaspoons The Spice Way Tomato Powder
- Salt and The Spice Way Black Pepper to taste
Preparation:
1. Cook the orzo in salted water until al dente. Drain, rinse briefly under cool water, and let it drain well.
2. In a small bowl, whisk together the olive oil, lemon juice, tomato powder, salt, and black pepper until smooth.
3. In a large bowl, combine the cooled orzo, spinach, feta, sun-dried tomatoes, and pine nuts. Pour in the dressing and toss well.
4. Chill 20 to 30 minutes before serving, then taste and adjust the seasoning if needed.
