Ingredients:
- 1 1/2 lbs boneless, skinless chicken thighs, thinly sliced
- 2 tablespoons The Spice Way Shawarma Blend
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1 teaspoon kosher salt
- 1 large onion, thinly sliced
- 4 pita breads or flatbreads
For Serving:
- Chopped tomato
- Sliced cucumber
- Chopped parsley
- Tahini sauce or plain yogurt
Preparation:
1. In a large bowl, combine the chicken, Shawarma Blend, olive oil, lemon juice, garlic, and salt. Toss well and let it marinate 30 minutes to 4 hours.
2. Heat the oven to 425°F. Spread the sliced onion on a sheet pan, then scatter the chicken over it in an even layer.
3. Roast 18 to 22 minutes, then broil 2 to 3 minutes until the edges char slightly and the chicken is fully cooked. The thickest pieces should reach 165°F.
4. Warm the pita breads and fill them with the chicken, onions, tomato, cucumber, parsley, and tahini or yogurt.
