Garlic-Paprika Grilled Veggie Skewers

Ingredients:

  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon black pepper
  • Salt to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine olive oil, garlic powder, smoked paprika, black pepper, and salt.
  3. Toss the vegetables in the spice mixture until evenly coated.
  4. Thread the vegetables onto skewers.
  5. Grill the skewers for 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  6. Garnish with fresh parsley and serve as a side dish or appetizer.
