Cornichon-Style Pickled Cucumbers (French Inspiration)

Ingredients (for ~2 pint jars):

  • ~1 lb (450 g) small cucumbers
  • 1 cup (240 ml) white wine vinegar
  • 1 cup (240 ml) water
  • 1 tablespoon kosher salt
  • 1 tablespoon sugar
  • 1 tablespoon of The Spice Way Pickling Spice per jar (total 2 tbsp)

Instructions:

  1. Prepare cucumbers: Wash and dry cucumbers. Trim ends.
  2. Make brine: In a saucepan, bring vinegar, water, salt, and sugar to a boil. Stir in spices.
  3. Pack jars: Pack cucumbers into jars, then pour hot brine over them.
  4. Seal & store: Seal jars and let cool, then refrigerate. Wait about 2 weeks for peak flavor.
