Chicken Enchiladas


    • 2 cups shredded cooked chicken
    • 1 cup grated cheese (such as Monterey Jack or cheddar)
    • 1 can (10 ounces) red enchilada sauce
    •  1/2 teaspoon granulated onion
    • 1/4 cup chopped fresh cilantro
    • 6-8 flour tortillas


    1. Preheat your oven to 350°F (175°C).
    2. In a mixing bowl, combine shredded chicken, 1/2 cup of cheese, granulated onion, and chopped cilantro. Mix well.
    3. Warm the flour tortillas in the microwave for about 30 seconds to make them more pliable.
    4. Spoon the chicken mixture evenly onto each tortilla, then roll them up tightly.
    5. Place the rolled tortillas seam-side down in a baking dish.
    6. Pour the enchilada sauce over the rolled tortillas, making sure they are well coated.
    7. Sprinkle the remaining cheese over the top.
    8. Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
    9. Garnish with additional chopped cilantro before serving, if desired.
    10. Serve hot and enjoy your delicious chicken enchiladas!
