Ingredients (for a ~3–4 lb/1.5–2 kg brisket):
- 1 gallon (3.8 L) water
- 1 cup (220 g) kosher salt
- ½ cup (100 g) sugar or brown sugar
- 2 tablespoons pink curing salt (Prague Powder #1) optional, for color
- 2–3 tablespoons of The Spice Way Pickling Spice
Instructions:
- Prepare brine: Dissolve salt, sugar, and optional curing salt in water.
- Infuse spices: Add the spice blend. Bring to a boil, then cool completely.
- Brine brisket: Submerge brisket in the cooled brine. Refrigerate for 5–7 days.
- Cook: Rinse brisket, then simmer or slow-cook to finish, typically 3–4 hours until tender.
