Preheat grill to medium-high. Grill patties about 4 minutes on one side. Flip, add cheese, and cook until desired doneness, about 3 more minutes for medium-rare.
On the bottom half of each toasted brioche bun, place a layer of arugula, followed by the grilled patty with cheese, caramelized onions, two slices of bacon, and a dollop of aioli or truffle mayo. Add any optional toppings like sautéed mushrooms or avocado slices if desired.
