Makes: 12 muffins
Ingredients:
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons The Spice Way Ceylon Cinnamon
- 1/4 teaspoon The Spice Way Ground Nutmeg
- 1/2 cup unsalted butter, melted and cooled slightly
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup buttermilk
- 1 1/2 cups peeled and finely diced apples
Preparation:
1. Heat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it lightly. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
2. In another bowl, whisk together the melted butter, brown sugar, granulated sugar, eggs, vanilla, and buttermilk until smooth.
3. Fold the wet mixture into the dry ingredients just until almost combined, then fold in the apples. Divide the batter evenly among the muffin cups.
4. Bake 18 to 22 minutes, until the tops are golden and a toothpick inserted in the center comes out clean. Cool 10 minutes before serving.
