Apple Cinnamon Muffins


  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ceylon cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup unsalted butter, melted
  • 1/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/3 cup buttermilk
  • 1 cup finely chopped apples


  1. Preheat the oven to 350’F (180’C); line a baking sheet with parchment paper.
  2. Whisk together flour, sugar, baking powder, salt, and fennel seeds in a bowl.
  3. In a separate bowl, beat eggs, vanilla extract, and orange zest.
  4. Add egg mixture to dry ingredients, then mix in melted butter until a dough forms.
  5. Divide the dough, shape into logs on the baking sheet.
  6. Bake for 25-30 minutes until firm and golden.
  7. Cool for 10 minutes, then slice diagonally. Arrange slices back on the sheet, Bake for 10-15 minutes until crisp.
  8. Cool completely and store in an airtight container.
  9. Enjoy your Fennel Seeds Biscotti with a cup of coffee or tea!
