Apple Cinnamon Muffins By The Spice Way May 28, 2024 Ingredients: 1 cup all-purpose flour 1/2 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 1/2 tsp ceylon cinnamon 1/4 tsp nutmeg 1/4 cup unsalted butter, melted 1/4 cup brown sugar, packed 1/4 cup granulated sugar 1 large egg 1/2 tsp vanilla extract 1/3 cup buttermilk 1 cup finely chopped apples Instructions: Preheat the oven to 350’F (180’C); line a baking sheet with parchment paper. Whisk together flour, sugar, baking powder, salt, and fennel seeds in a bowl. In a separate bowl, beat eggs, vanilla extract, and orange zest. Add egg mixture to dry ingredients, then mix in melted butter until a dough forms. Divide the dough, shape into logs on the baking sheet. Bake for 25-30 minutes until firm and golden. Cool for 10 minutes, then slice diagonally. Arrange slices back on the sheet, Bake for 10-15 minutes until crisp. Cool completely and store in an airtight container.
