Sweet Potato Pie

Serves: 8

Ingredients:

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 3 to 4 tablespoons ice water

For the Filling:

Preparation:

  1. Make the crust: mix flour and salt. Cut in butter until crumbly. Add ice water gradually until dough forms. Shape into a disk, wrap, and chill at least 30 minutes.
  2. Heat oven to 400°F. Roast sweet potatoes until very tender, 45 to 60 minutes. Cool, peel, and mash. Reduce oven to 350°F.
  3. Roll dough into a 12-inch circle and fit into a 9-inch pie dish. Trim and crimp edges.
  4. Whisk sweet potatoes, sugars, eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Whisk in milk and melted butter until smooth.
  5. Pour into crust and bake 50 to 60 minutes until edges are set and center is slightly soft. Cool completely before slicing.
