Ingredients:
- 2 lbs pumpkin, peeled and cut into 1-inch cubes
- 2 cups sugar
- 1 cinnamon stick (cassia)
- 4 whole cloves
- 1/2 tsp whole allspice
- 1 star anise
- 2 tablespoons dried orange peel
- 1/4 cup water
Instructions:
- In a large pot, combine the pumpkin cubes, sugar, water, cinnamon stick, cloves, allspice, star anise, and dried orange peel.
- Bring the mixture to a boil over medium heat, then reduce to a low simmer.
- Stir occasionally and cook for 45-60 minutes, or until the pumpkin becomes translucent and the syrup thickens.
- Once the pumpkin is tender and coated in syrup, remove from heat and let it cool.
- Discard the cinnamon stick, cloves, allspice, star anise, and orange peel.
