Lamb Kofta Skewers with Sumac Onions

Serves: 4 to 6
Ingredients
  • 1 1/2 lbs ground lamb
  • 1 small onion, minced very finely and squeezed dry
  • 2 garlic cloves, minced
  • 1 1/2 tablespoons The Spice Way Kebab Seasoning
  • 2 tablespoons chopped parsley
  • 1 1/4 teaspoons kosher salt
For the Sumac Onions
  • 1 red onion, thinly sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon sumac
  • Pinch of salt
For the Tahini Yogurt
  • 3/4 cup plain Greek yogurt
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • Pinch of salt
For Serving
  • Warm pita or flatbread
Preparation
  1. Toss the red onion with lemon juice, sumac, and a pinch of salt. Set aside.
  2. Stir together the yogurt, tahini, lemon juice, and a pinch of salt.
  3. Mix the lamb, minced onion, garlic, Kebab Seasoning, parsley, and kosher salt until tacky.
  4. Divide into 6 portions and shape onto flat skewers, or shape into long oval koftas if not using skewers. Chill for 20 to 30 minutes.
  5. Grill or broil over high heat for 8 to 10 minutes, turning once, until browned and just cooked through.
  6. Serve with the sumac onions, tahini yogurt, and warm bread.
Plating Note

Lay the koftas over flatbread and mound the sumac onions beside them, not on top, so the char stays visible.

Note

Flat metal skewers are ideal here when you have them.
