Kaju Katli

Ingredients:

  • 1 cup cashews (kaju)
  • 1/2 cup sugar
  • 1/4 cup water
  • 1/2 tsp Ground Cardamom
  • 1 tsp ghee (optional)
  • Silver leaf (optional, for garnish)

Instructions:

  1. Grind cashews into a fine powder (avoid over-blending).
  2. In a pan, dissolve sugar in water and cook until it reaches a sticky consistency.
  3. Add cashew powder and ground cardamom, stirring on low heat until the mixture thickens and leaves the sides of the pan.
  4. Transfer the dough to a greased surface, knead until smooth, and roll it out flat.
  5. Cut into diamond shapes and garnish with silver leaf if desired.
