Garlic-Dill Roasted Potatoes

Serves: 4 to 6

Ingredients:

  • 2 pounds baby potatoes or Yukon Gold potatoes, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon The Spice Way Granulated Garlic
  • 1 1/2 teaspoons The Spice Way Dill Seeds, lightly crushed
  • 1 teaspoon kosher salt
  • 1/4 teaspoon The Spice Way Black Pepper
  • 1 tablespoon chopped fresh dill, plus more for finishing if desired

Preparation:

1. Heat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. In a large bowl, toss the potatoes with the olive oil, granulated garlic, dill seeds, salt, and black pepper until evenly coated.

3. Spread the potatoes in a single layer on the baking sheet. Roast for 35 to 40 minutes, turning once halfway through, until golden at the edges and tender in the center.

4. Transfer to a serving bowl, toss with the fresh dill, and serve hot.

Why this fix is right: this becomes a true dill potato recipe, not a confused rosemary-dill mash-up.
