Ingredients:
- 1 pound cooked corned beef, diced
- 4 large potatoes, peeled and diced 1 onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- Fresh parsley, chopped (optional, for garnish)
- Poached or fried eggs (optional, for serving)
Instructions:
- In a large skillet, heat olive oil and butter over medium heat.
- Add diced potatoes to the skillet and cook, stirring occasionally, until they are golden brown and cooked through, about 10-12 minutes.
- Add diced onion and minced garlic to the skillet. Cook until the onions are translucent and garlic is fragrant, about 2-3 minutes.
- Stir in the diced corned beef and cayenne pepper. Season with salt and black pepper to taste. Cook for another 5-7 minutes, or until the corned beef is heated through and slightly crispy.
- Once the hash is cooked to your liking, remove from heat. Taste and adjust seasoning if necessary.
- Serve the Corned Beef & Hash hot, garnished with chopped parsley if desired.
- You can also serve it with poached or fried eggs on top for extra flavor and richness.
