Ingredients:
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 to 2 teaspoons chipotle powder
- I teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 8 small flour or corn tortillas
- Toppings: shredded lettuce, diced tomatoes shredded cheese, sour cream, cilantro, lime wedges
Instructions:
- In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a spoon as it cooks.
- Add chopped onions and minced garlic to the skillet. Sauté until the onions are soft and translucent.
- Stir in the diced tomatoes chipotle powder, ground cumin, smoked paprika, salt, and pepper. Start with 1 teaspoon of chipotle powder and adjust to taste. Simmer the mixture for about 10-15 minutes, allowing the flavors to meld.
- While the beef mixture simmers, warm the tortillas according to the package instructions.
- Assemble the tacos bv spooning the chipotle beef mixture onto each tortilla. Top with shredded lettuce, dice tomatoes, shredded cheese, sour cream, and cilantro.
- Serve the Chipotle Beef Tacos with lime wedges on the side for squeezing over the tacos.
