Chipotle Beef Tacos

Ingredients:

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 to 2 teaspoons chipotle powder
  • I teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 small flour or corn tortillas
  • Toppings: shredded lettuce, diced tomatoes shredded cheese, sour cream, cilantro, lime wedges

Instructions:

  1. In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a spoon as it cooks.
  2. Add chopped onions and minced garlic to the skillet. Sauté until the onions are soft and translucent.
  3. Stir in the diced tomatoes chipotle powder, ground cumin, smoked paprika, salt, and pepper. Start with 1 teaspoon of chipotle powder and adjust to taste. Simmer the mixture for about 10-15 minutes, allowing the flavors to meld.
  4. While the beef mixture simmers, warm the tortillas according to the package instructions.
  5. Assemble the tacos bv spooning the chipotle beef mixture onto each tortilla. Top with shredded lettuce, dice tomatoes, shredded cheese, sour cream, and cilantro.
  6. Serve the Chipotle Beef Tacos with lime wedges on the side for squeezing over the tacos.
