Chicken Kofta Kebabs

Ingredients

Preparation

  1. Heat the oven to 425°F or preheat a grill to medium-high heat.
  2. In a bowl, combine the ground chicken, grated onion, garlic, parsley, breadcrumbs, egg, cumin, paprika, cinnamon, salt, black pepper, and olive oil.
  3. Mix just until combined, then shape into 8 oblong kebabs around skewers or as free-form logs on a parchment-lined sheet pan.
  4. Roast or grill for 10 to 12 minutes, turning once if needed, until browned and the center reaches 165°F.
  5. Serve hot with tahini, flatbread, and a simple salad.
