Chicken Kebab Skewers with Charred Peppers

Serves: 4
Ingredients
  • 1 1/2 lbs boneless, skinless chicken thighs, cut into chunks
  • 1 tablespoon The Spice Way Kebab Seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons plain yogurt
  • 1 tablespoon lemon juice
  • 1 1/4 teaspoons kosher salt
  • 2 bell peppers, cut into chunks
  • 1 red onion, cut into chunks
For the Sauce
  • 3/4 cup plain Greek yogurt
  • 1 small garlic clove, finely grated
  • Pinch of salt
Preparation
  1. In a bowl, toss the chicken with the Kebab Seasoning, olive oil, yogurt, lemon juice, and salt. Let sit 30 minutes.
  2. Stir the yogurt, grated garlic, and salt together.
  3. Thread the chicken, peppers, and onion onto skewers.
  4. Grill or broil over high heat for 10 to 12 minutes, turning once or twice, until browned and cooked through.
  5. Serve with the garlic yogurt.
Plating Note

Arrange the skewers over a pool of yogurt and let the charred peppers sit visibly on top.

Note

If using wooden skewers, soak them first.
