INGREDIENTS:
For the Chaat:
- 2 cups boiled chickpeas (or canned, drained and rinsed)
- 2 medium-sized potatoes, boiled, peeled, and chopped into small cubes
- 1 medium-sized onion, finely chopped 1
- large tomato, finely chopped
- 1 green chili, finely chopped (optional, adjust to taste)
- 1/4 cup chopped fresh coriander leaves (cilantro)
- 1/4 cup tamarind chutney
- 1/4 cup mint-coriander chutney
- Sev (crispy chickpea flour noodles), for garnish
- Fresh lemon wedges, for serving
- Salt to taste
- Chaat masala, to taste (optional)
For the Spice Blend:
- 1 teaspoon ground coriander
- 1 teaspoon curry powder
- 1/2 teaspoon ground all spice
- 1/2 teaspoon red chili powder (adjust to taste)
INSTRUCTIONS:
- In a large mixing bowl, combine the boiled chickpeas, chopped potatoes, chopped onion, chopped tomato, and green chili.
- In a small bowl, mix together the ground coriander, curry powder, ground allspice, and red chili powder to create the spice blend.
- Sprinkle the spice blend over the chickpea and potato mixture. Add salt to taste and gently toss everything together until the spices are evenly distributed.
- Drizzle the tamarind chutney and mint-coriander chutney over the mixture according to your preference. Toss gently to coat everything with the chutneys.
- Taste and adjust seasoning if needed. You can sprinkle some chaat masala for extra flavor if desired.
- Transfer the chaat to serving plates or bowls. Sprinkle sev generously over the top of each serving.
- Garnish with chopped fresh coriander leaves (cilantro) and serve immediately with lemon wedges on the side.
