American Flag Apple Pie

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup (2 sticks) unsalted butter, chilled and cut into small pieces
  • 1/4 to 1/2 cup ice water
  • 6-7 cups thinly sliced, peeled apples (such as Granny Smith or Honeycrisp)
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)
  • 2 tablespoons coarse sugar for sprinkling
  • Ret and blue food colouring
  • Extra dough for stars and stripes decorations

Instructions:

  1. In a large bowl,mix the flour,salt, and sugar.
  2. Cut in the chilled butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
  3. Gradually add ice water, a tablespoon at a time, until the dough comes together.
  4. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  5. In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, allspice, flour, lemon juice, and vanilla extract. Toss to coat the apples evenly, Set aside.
  6. Preheat the oven to 375°F (190°C).
  7. On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie plate. Transfer the dough to the pie plate and trim the edges.
  8. Pour the apple filling into the crust, mounding slightly in the center.
  9. Holl out the second disk of dough. Use a small Star-shaped cookie cutter to cut out stars. Use a knife or pastry wheel to cut strips for the stripes.
  10. Arrange the stars and stripes on top of the apple filling to resemble the American flag.
  11. Use red and blue food coloring to paint the stars and stripes for a festive look.
  12. Brush the pie crust with beaten egg and sprinkle with coarse sugar if desired.
  13. Bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbly.
  14. If the edges start to brown too quickly, cover them with aluminum foil to prevent burning.
  15. Allow the pie to cool completely on a wire rack before serving.
