Ingredients:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup (2 sticks) unsalted butter, chilled and cut into small pieces
- 1/4 to 1/2 cup ice water
- 6-7 cups thinly sliced, peeled apples (such as Granny Smith or Honeycrisp)
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 egg, beaten (for egg wash)
- 2 tablespoons coarse sugar for sprinkling
- Ret and blue food colouring
- Extra dough for stars and stripes decorations
Instructions:
- In a large bowl,mix the flour,salt, and sugar.
- Cut in the chilled butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
- Gradually add ice water, a tablespoon at a time, until the dough comes together.
- Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
- In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, allspice, flour, lemon juice, and vanilla extract. Toss to coat the apples evenly, Set aside.
- Preheat the oven to 375°F (190°C).
- On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie plate. Transfer the dough to the pie plate and trim the edges.
- Pour the apple filling into the crust, mounding slightly in the center.
- Holl out the second disk of dough. Use a small Star-shaped cookie cutter to cut out stars. Use a knife or pastry wheel to cut strips for the stripes.
- Arrange the stars and stripes on top of the apple filling to resemble the American flag.
- Use red and blue food coloring to paint the stars and stripes for a festive look.
- Brush the pie crust with beaten egg and sprinkle with coarse sugar if desired.
- Bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbly.
- If the edges start to brown too quickly, cover them with aluminum foil to prevent burning.
- Allow the pie to cool completely on a wire rack before serving.
