Ingredients
- 6 to 8 hard-boiled eggs, peeled
- 3/4 cup white vinegar
- 3/4 cup water
- 1/2 cup soy sauce
- 1 tablespoon sugar
- 1 tablespoon The Spice Way Pickling Spice
Preparation
- In a saucepan, combine vinegar, water, soy sauce, and sugar. Bring just to a boil, then turn off heat and stir in pickling spice.
- Place peeled eggs in a clean 1-quart jar.
- Pour hot brine over eggs, ensuring they are fully submerged.
- Cover and refrigerate. Let cure at least 1 week; 10–14 days gives deeper color and flavor.
Note: Refrigerator-only pickle. This is a soy-forward variation.
