Sheet-Pan Kebab Chicken and Red Onions

Serves: 4
Ingredients
  • 1 1/2 lbs boneless, skinless chicken thighs, cut into large pieces
  • 1 1/2 tablespoons The Spice Way Kebab Seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons plain yogurt
  • 1 tablespoon lemon juice
  • 1 1/4 teaspoons kosher salt
  • 1 large red onion, cut into wedges
  • 1 red bell pepper, cut into strips
Preparation
  1. Heat the oven to 450°F.
  2. In a large bowl, toss the chicken with the Kebab Seasoning, olive oil, yogurt, lemon juice, and salt. Let sit 20 to 30 minutes if you have time.
  3. Spread the chicken, onion, and bell pepper on a sheet pan in a single layer.
  4. Roast for 22 to 25 minutes, stirring once halfway through, until the chicken is browned and cooked through.
  5. Broil for 2 minutes at the end if you want deeper char.
Plating Note

Pile onto a platter and finish with extra lemon wedges for squeezing at the table.
