Ingredients
- 1 1/2 lbs boneless, skinless chicken thighs, cut into large pieces
- 1 1/2 tablespoons The Spice Way Kebab Seasoning
- 2 tablespoons olive oil
- 2 tablespoons plain yogurt
- 1 tablespoon lemon juice
- 1 1/4 teaspoons kosher salt
- 1 large red onion, cut into wedges
- 1 red bell pepper, cut into strips
Preparation
- Heat the oven to 450°F.
- In a large bowl, toss the chicken with the Kebab Seasoning, olive oil, yogurt, lemon juice, and salt. Let sit 20 to 30 minutes if you have time.
- Spread the chicken, onion, and bell pepper on a sheet pan in a single layer.
- Roast for 22 to 25 minutes, stirring once halfway through, until the chicken is browned and cooked through.
- Broil for 2 minutes at the end if you want deeper char.
Plating Note
Pile onto a platter and finish with extra lemon wedges for squeezing at the table.
