Pumpkin Chili

Serves: 6

Ingredients:

For Garnish:

  • Sour cream or Greek yogurt
  • Chopped fresh cilantro
  • Diced avocado
  • Shredded cheddar cheese

Preparation:

  1. Heat a large pot over medium-high heat. Add ground turkey or beef and cook until browned, breaking it into small pieces. Remove excess liquid if needed. Add olive oil, onion, and bell pepper and cook 5 minutes until softened. Add garlic and cook 30 seconds more.
  2. Stir in cumin, chili powder, paprika, cinnamon, nutmeg, and cayenne (if using). Cook 30 seconds to bloom spices, then return meat to the pot if removed.
  3. Add beans, diced tomatoes, pumpkin purée, and broth. Season with salt and black pepper. Bring to a simmer, then lower heat and cook 30 to 40 minutes, stirring occasionally, until thick and cohesive.
  4. Taste and adjust seasoning. Serve hot with sour cream or yogurt, cilantro, avocado, and cheddar cheese.
