Ingredients:
- 1 pound ground turkey or ground beef
- 1 tablespoon olive oil
- 1 large onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2 teaspoons The Spice Way Ground Cumin
- 1 tablespoon The Spice Way Chili Powder
- 1 teaspoon The Spice Way Paprika
- 1/2 teaspoon The Spice Way Ground Cinnamon
- 1/4 teaspoon The Spice Way Ground Nutmeg
- 1/4 teaspoon The Spice Way Cayenne Pepper (optional)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes, with juices
- 2 cups pumpkin purée
- 2 cups chicken or vegetable broth
- Salt and The Spice Way Black Pepper, to taste
For Garnish:
- Sour cream or Greek yogurt
- Chopped fresh cilantro
- Diced avocado
- Shredded cheddar cheese
Preparation:
- Heat a large pot over medium-high heat. Add ground turkey or beef and cook until browned, breaking it into small pieces. Remove excess liquid if needed. Add olive oil, onion, and bell pepper and cook 5 minutes until softened. Add garlic and cook 30 seconds more.
- Stir in cumin, chili powder, paprika, cinnamon, nutmeg, and cayenne (if using). Cook 30 seconds to bloom spices, then return meat to the pot if removed.
- Add beans, diced tomatoes, pumpkin purée, and broth. Season with salt and black pepper. Bring to a simmer, then lower heat and cook 30 to 40 minutes, stirring occasionally, until thick and cohesive.
- Taste and adjust seasoning. Serve hot with sour cream or yogurt, cilantro, avocado, and cheddar cheese.
