Potato and Corned Beef Knishes

Makes: 8 knishes

Ingredients:

For the Dough:
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 large egg, beaten
  • 1/4 cup vegetable oil
  • 1 teaspoon lemon juice
  • 1/2 cup water
For the Filling:
  • 1 lb russet potatoes, peeled and cut into chunks
  • 1 tablespoon butter or oil
  • 1 medium onion, finely chopped
  • 1 cup cooked corned beef, finely chopped
  • 2 tablespoons chopped parsley
  • 1/4 teaspoon The Spice Way Black Pepper
  • Pinch of The Spice Way Cayenne Pepper (optional)
  • Salt only if needed
  • 1 egg, beaten (for egg wash)

Preparation:

  1. Make the dough: whisk together flour, baking powder, and salt. Stir in egg, oil, lemon juice, and water until a dough forms. Knead briefly until smooth, cover, and let rest 30 to 45 minutes.
  2. Cook potatoes in salted water until tender. Drain and mash.
  3. Cook onion in butter or oil over medium heat until soft and lightly golden. Mix with mashed potatoes, corned beef, parsley, black pepper, and cayenne. Taste and adjust seasoning if needed.
  4. Divide dough into 8 pieces. Roll each into a round, add filling, gather dough around filling, and pinch to seal. Place seam-side down on a parchment-lined tray and flatten slightly.
  5. Heat oven to 375°F (190°C). Brush with egg wash and bake 25 to 30 minutes until golden brown.
