Pickled Eggs

Makes: 1 quart jar

Ingredients

  • 6 to 8 hard-boiled eggs, peeled
  • 1 cup white vinegar
  • 1 cup water
  • 1 tablespoon kosher salt
  • 1 tablespoon sugar (optional)
  • 1 tablespoon The Spice Way Pickling Spice

Preparation

  1. Place the peeled hard-boiled eggs into a clean quart-sized jar.
  2. In a saucepan, combine the white vinegar, water, kosher salt, sugar if using, and pickling spice. Bring to a gentle boil, stirring until the salt and sugar dissolve completely.
  3. Remove from the heat and let the brine cool slightly for a few minutes.
  4. Carefully pour the warm brine over the eggs, making sure they are fully submerged.
  5. Seal the jar and refrigerate for at least 3 to 5 days before serving for best flavor.

Note: Refrigerator pickles only. Flavor deepens after about 1 week.
