Shrimp Scampi

Serves: 4

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh parsley
  • Salt and The Spice Way Black Pepper to taste
  • Pinch of The Spice Way Red Pepper Flakes (optional)

Preparation:

  1. Pat shrimp dry and season with salt and black pepper. Heat 1 tablespoon butter with olive oil in a skillet over medium-high heat. Cook shrimp about 1 minute per side until just pink. Remove and set aside.
  2. Reduce heat to medium. Add garlic and red pepper flakes (if using) and cook 30 seconds until fragrant. Add white wine and lemon juice and simmer 2 minutes.
  3. Return shrimp to pan. Add remaining butter, parsley, and lemon zest. Toss until shrimp are opaque and sauce is glossy.
  4. Serve immediately with crusty bread, rice, or pasta.
